Great Vegetarian Dishes That You Might Want to Try (Even If You Aren’t One)

Hello ladies and gentlemen of Mount Olive College (MOC). Today, I’m going to focus on the best part of being a vegetarian, at least for me anyway, the food! First off, there are many different recipes for vegetarian meals. Some use beans, tofu, peppers, onions, and olives. I’m going to drop a few of my favorite vegetarian dishes, as well as, give you pictures, just so it can make you mouth water.

Three Cheese and Spinach Calzone:



It’s really simple to make and well worth it. You take a few squares of refrigerated pizza dough and fill them with a mixture of frozen spinach, ricotta cheese, garlic, and basil, form them into triangles, bake, and top them off with a tomato-parmesan sauce.

*you don’t have to use ricotta cheese, you can use up to three different cheeses of your choosing. I personally like to experiment with different ones.

Vegetarian Minestrone:



This one is too good for words. It’s a really simple recipe and you can experiment with this dish as well. The combination I usually use in this soup are; carrots, celery, onions, tomatoes, green beans, spinach, zucchini, canned beans, (pinto or black), and cooked pasta, in vegetable broth with herbs.

Vegetarian Lasagna:



If you’re a HUGE fan of Italian food and are a vegetarian, but you just don’t want to give up meat, don’t fret. There is also vegetarian lasagna! This healthier lasagna is packed with three kinds of cheese, marinara sauce, and a vegetarian meat alternative. Tofu, or tempeh.

Mediterranean Vegetarian Pasta:



This vegetarian dish is very healthy and will definitely leave you and your stomach satisfied. You can top it off with cheese (preferably grated Romano cheese). This also is a very easy and delicious dish.

*Some vegetables you can use in this dish are: eggplant, zucchini, olives, and tomatoes.

Well, that’s just a few dishes. I wanted to give you guys an insight of the foods myself and other vegetarians eat. I can honestly say I haven’t cooked all of these dishes. I have only cooked a few that I’ve shown you. If you have any questions or would like the recipe for some of these delicious foods, I would be more than glad to help.
